Introduction

After finding the best conditions based on the ratio, the microwave power variable (100 W, 180 W, 300 W, 450 W, and 600 W) and extraction time (1 minute and 3 minutes) were also tested. Analysis of tannin content was carried out using the UV-Vis spectrophotometry method, while the function of functional groups of Balakka fruit extracts was carried out with Fourier-Transform Infrared Spectroscopy (FTIR).

Results

The results showed that Balakka fruit extract contains tannins, which were proven through qualitative tests with gelatin and fecl3 and FTIR analysis. Research shows that the addition of the number of aquadest solvents in the extraction process has a significant effect on tannin yields, where the 1/30 g/ml ratio gives the best results. However, when the microwave power and extraction time are increased, tannin yields have decreased. The highest tannin yield is obtained at a microwave power condition of 100 W with an extraction time of 1 minute and a solvent ratio of 1/30 g/ml, reaching 32.70 mg/g.

Analysis of the Effect of Variables on Tannin Extraction

From these results, it can be analyzed that each variable in the extraction process has a significant impact on the final outcome. The increase in the number of solvents in the ratio of 1/30 g/ml seems to be able to facilitate the absorption of more tannin compounds from the Balakka fruit. In the context of extraction, the right amount of solvent is the key to ensuring that the desired compound can be dissolved optimally.

On the other hand, when the microwave power and extraction time are increased, a decrease in tannin yields. This may be caused by excessive heating which can damage the structure of tannin compounds. Microwaves that are too strong can cause degradation of phenolic compounds due to excessive heat, thereby reducing the number of tannins that are successfully extracted.

Conclusion

The tannin extraction of the Balakka fruit using the Microwave Assisted Extraction method shows promising results with the highest yield in certain conditions. This study provides insight into the importance of variable arrangements such as the solvent ratio, microwave power, and extraction time in the process of separating bioactive compounds. These findings are not only relevant for scientific research but also have practical applications in the food and pharmaceutical industry that utilize plant extracts.
