Introduction

Cassava (Manihot esculenta) is a staple food in Indonesia, ranking third after rice and corn in terms of food production. This study aims to analyze the natural cassava drying kinetics, determine the right mathematical model for drying, and understand the drying characteristics of the cassava itself.

The drying process was conducted in two methods: direct sunlight and indoor drying without exposure to sunlight. The results of the study showed that the thickness of the cassava and the drying temperature had a significant effect on the drying rate. The best drying rate was observed in a sample with a thickness of 0.5 cm dried outdoors, indicating that thinner thickness and higher temperatures can increase the efficiency of the drying process.

Drying Mathematics Model

This study also sought to determine the most suitable mathematical model for explaining drying kinetics. The three models tested in this study were the Newton model, the Page model, and the Henderson-Pabis model. Adjustment of the model was done by matching research data on the three models. The suitability of each model was measured using the coefficient of determination (R²). The analysis showed that the Page model was the most appropriate model to describe the drying of cassava.
