Introduction

In this study, we aimed to test the composition of shrimp paste raw materials and the quality of shrimp paste produced using shrimp paste printing devices. Our research team, led by Kelvin and guided by Ainun Rohanah and Adian Rindang, conducted this study at the University of North Sumatra Agricultural Engineering Laboratory, the Biochemical Laboratory of the Faculty of Mathematics and Natural Sciences (FMIPA), and the FMIPA Microbiology Laboratory.

Shrimp paste is a fermented food product made from fish or shrimp that has undergone a salting process and then fermented for several days. Methodology

This study was conducted at the University of North Sumatra Agricultural Engineering Laboratory, the Biochemical Laboratory of the FMIPA, and the FMIPA Microbiology Laboratory. We used a combination of laboratory and field experiments to test the composition of shrimp paste raw materials and the quality of shrimp paste produced using shrimp paste printing devices.

We observed several parameters, including:

However, the combination of shrimp paste raw materials had no significant effect on the protein content and the number of E.coli bacteria.
