Introduction

Palm oil is one of the most widely consumed edible oils globally, and its production has been increasing over the years. However, the potential of palm oil umbut (Elaeis guineensis Jacq.) as a food source has not been fully explored. The umbut, which is the stem of the oil palm tree, is often discarded after logging, but it can be a valuable source of nutrients. This study aims to determine the effect of age after logging and location of umbut on the stem on the potential of palm oil umbut as foodstuffs.

Background

Oil palm (Elaeis guineensis Jacq.) is a tropical plant that is widely cultivated in many parts of the world. The palm oil produced from the fruit of the oil palm tree is a major source of edible oil globally. However, the umbut, which is the stem of the oil palm tree, is often discarded after logging. The umbut is rich in nutrients, including water, ash, total dissolved solids (TSS), total sugar, and other chemical compounds. The potential of palm oil umbut as a food source has not been fully explored, and this study aims to investigate the effect of age after logging and location of umbut on the stem on its potential as foodstuffs.

Methodology

This study was conducted using a random design method of groups involving two main factors, namely age after logging (0 days, 10 days, 20 days, and 30 days) and the location of the umbut on the stem (0-20 cm, 20-40 cm, 40-60 cm, and 60-80 cm). The study took place from September to November 2018 at the Food Technology Laboratory, Food Science and Technology Study Program, Faculty of Agriculture, University of North Sumatra, Medan. The analysis was carried out in two stages, namely in fresh umbut and dry umbut. In fresh umbut, the tested parameters include diameter, weight, water content, pH, total dissolved solids (TSS), and total sugar. As for dry umbut, the parameters analyzed include water content, ash content, TSS, total sugar, reducing sugar, fiber, protein, fat, and starch.

Results and Discussion

The results showed that age after logging had a significant effect on all measured parameters. That is, the longer the time after logging, the quality of palm oil can increase, especially in water content and other nutritional content. The location of the umbut in the stem also has a significant effect, except in the diameter parameters and ash content. This shows that the location of Umbut affects the physical and chemical properties of oil palm umbut which can have an impact on the potential for use as food.

Interaction between age after logging and location of umbut does not have a significant effect on all parameters, except in dry umbut water content, ash content, dry TSS umbut, and total dried umbut sugar. This indicates that these factors can affect the quality of oil palm umbut, but not always in strong interactions.

From the results of the analysis, the best treatment was obtained on Umbut which was 30 days old after logging with the location on the stem 60-80 cm. This shows that the disposal of umbut at that age and the right position can produce higher quality umbuts to be used as food. The potential of palm oil umbut as food is very promising, especially with more attention during logging and location on the stem.

Conclusion

This study revealed the importance of age after logging and location of umbut in the stem in increasing the potential of oil palm umbut as food. By paying attention to these factors, it is hoped that quality oil palm can be produced and more nutritious. Further efforts in this study can help in maximizing the use of oil palm umbut in the food industry.
